Nadine was a mortal woman who worked at and presumably owned her own diner in Texas.
History[]
After Leo lost his memories and saved a car crash victim, the sheriff sent him off to grab a bite to eat at Nadine's. Once there, Leo told Nadine that the pie he ate was the best he'd had. Nadine made some joke about Leo not being able to remember how to tie his own shoes and when she was helping him figure out his life she mentioned that she wish she would have hit her ex-husband with a cast-iron for cheating on her.
Phoebe and Paige asked Nadine for help on finding Leo and Phoebe asked for a car. Nadine was able to supply one from somewhere, probably hers.
